RATATOUILLE

 As I promised, here is an other delicious Sunday's recipe post. Today I will show you one of my favourites vegetable dishes- Ratatouille. Ratatouille is a traditional French vegetable dish, that is made of:

2 or 3 Tomatoes
1-2 squashes or zucchini
1-2 eggplants
parsley
olive oil
salt
pepper

For the sauce:
4 tomatoes, or 300 g of peeled tomatoes
1 onion
1 Bulgarian pepper
sugar 
salt 
pepper
Wash eggplant, tomatoes and zucchini and cut into 2-3 cm thick sprinkle asssalt and leave for 20 minutes.
Сook tomato sauce:
1. Bulgarian pepperand onion peel and finely chop.
2. Tomatoes pour over boiling water, remove the skin and grind in a blender (or use a ready-made tomato paste as I am).
3. In a preheated pan with oil or frying pan put chopped onion, salt and fry until the pulp. Add tomatoe pasta, salt and pepper and sugar (on your taste) and mix it all. Put bulgarian pepper and simmer over low heat, mixing it, for 10-15 minutes.
 
At the bottom of a baking dish place half of tomato sauce (set aside the remaining sauce to your final dish).
Place the vegetables, alternating: the circle of tomato, eggplant circle, a circle of zucchini, until your from is full.
Add salt,chopped herbs and pepper, and drizzle with oil.
Cover the form with parchment or aluminum paper and bake for 1 hour in a heated up to 190-200 ° C oven.
Put vegetables on a plate and serve with remaining tomato sauce.
